IAN PUGH

We were delighted when Ian Pugh joined us in September 2019, taking up the helm in our kitchen. Ian grew up in Ludlow and started work as a pot washer for Mr. Underhills at the age of 15. He spent the next ten years working his way up the ranks, running the kitchen for eight years, to Michelin star standard. The man can cook!

Ian’s menus at the Oak use quality local ingredients – making the most of the bountiful produce in our part of the world – expertly cooked with great care and imagination. Lunch is a less formal affair, but for Dinner [Thursday to Saturday] the menu gets a little more serious: which brings us to Sundays…

Herefordshire is very much farming country, and there’s no better way to showcase how lucky we are to be here than our Sunday lunches. Ian roasts top quality rare breed beef and locally raised pork loin every week. His pork and cider gravy is a thing of beauty.

For a very special treat, look out for our tasting evenings. Ian designs menus around a theme, and then complements each dish with the perfect wine partner.

Lene, Ian and team.
